There is nothing better than a delicious and fast dish. Especially when you are too busy and you do not have a lot of time to spend in the kitchen. Also, you have just a couple of ingredients at home. The following recipe is one of my favorites for such a days. The whole process, preparation + the cooking, takes around 15 minutes and it serves 2 portions. So in case you want to cook something quick and yummy, this will be a perfect dish for you. Enjoy πŸ™‚

Ingredients

  • 200g of pasta (spiral shape is the best)
  • 50g of cocktailΒ tomatoes
  • Bunch of fresh basil leaves
  • 2 tablespoons of pine nuts
  • 2 tablespoons of fast VeGaN parmesan (you can find the recipe here)
  • Olive oil
  • 1 clove of garlic
  • 1 lemon
  • Salt & pepper

Easy pasta with basil pesto (VeGaN)

Directions

  1. Cook the pasta according to the instruction on the package. Drain and place back into the pot.
  2. Place the fresh basil leaves, 1 tablespoon of pine nuts, 1 clove of garlic and 1 tablespoon of olive oil into a blender or food processor. Blend on a high speed until the basil is completely mixed. Add 2 tablespoons of VeGaN parmesan and another tablespoon of olive oil and blend for another 1 minute. Squeeze in 2 tablespoons of the lemon juice, season with a pinch of salt and blend again. In case your pesto is very thick you can lose it by adding another tablespoon of olive oil.
  3. Once your pasta is ready add the pesto, halved cocktail tomatoes to the pot and mix well with a spoon.
  4. Heat up a small pan and dry roast the pine nuts. Do not add any additional oil.
  5. Serve the pasta with vegan parmesan and roasted pine nuts on top.
