Pasta Fresca with Chorizo

This week I will show you one of my TOP recipes. I make it always when I crave something really delicious but I do not want to spend a lot of time cooking. All you have to do is to cook (my favorite) the tomato sauce, grill some chorizo and cook the pasta fresca. The preparation takes around 5 minutes and the cooking itself around 25 minutes. So all together you will have it cooked in 30 minutes. Awesome right? πŸ™‚ Check out the recipe and hurray to the kitchen… πŸ™‚

Pasta Fresca with Chorizo

Ingredients

  • 400g of pasta fresca
  • 200g of Spanish chorizo (try to use a slightly spicy one)
  • Olive oil
  • 1 tablespoon of butter
  • 4 ripe tomatoes
  • 6 cloves of garlic
  • 2 onions (if you can then use a white one, it will add a bit more sweetness to the dish)
  • 1 teaspoon of tomato puree
  • Couple of fresh basil leaves
  • Parmesan cheese
  • Black olives
  • Salt & Pepper

Directions

  1. Firstly let’s prepare the tomato sauce. Chop the onions and the garlic into small cubes. Heat up 1 tablespoon of olive oil and add 1 tablespoon of butter. Once the butter is nicely melted add the onions and cook for 5 minutes on medium heat. Add the chopped garlic and cook until it will start to turn brown. Quarter your tomatoes (cutting out the hard inside) and add to the pan. Season with a good pinch of salt, cover with the lid and cook for 15 minutes. After 15 minutes add the teaspoon of the tomato puree, stir well, cover back and cook for another 10 minutes.
  2. Cook the pasta fresca according to the package instructions and set aside.
  3. Meanwhile, the tomato sauce is being cooked, slice the chorizo and the black olives into thin slices. Set aside.
  4. When the tomato sauce is done place it into a bowl and blend using a kitchen blender until smooth. Place the chorizo in the pan and grill it for 2-3 minutes. Then pour back the blended tomatoΒ sauce, add the black olives and the cooked pasta fresca. Stir well and serve immediately.
  5. Sprinkle with grated parmesan cheese and enjoy πŸ™‚ It goes the best with a nice Tempranillo or Rioja wine πŸ™‚
