Super crispy onion rings – VeGaN

It all started with my 3 months VeGaN challenge. At the beginning, I was following all the rules and tried to eat super healthy foods. I ate a lot of salads, couscous, beans, chickpeas and a lot of soy. But after a while, I started to miss my favorite omnivore dishes. Like nice and crispy onion rings for example. And because I didn’t want to break the challenge and I wanted them badly I had to figure out the way how to make them. So I started to look for some recipes. Unfortunately (or fortunately) I was not able to find any which would be good for me.

After I tried like 3 different versions I gave up the search and decided to create my own recipe.ย You know, I wanted a recipe which would satisfy not only me but also you guys. And in my opinion, I made it. My onion rings are pure gold ๐Ÿ™‚ Their crispness is unbelievable and you would never say that they are fully VeGaN. Wanna try them out? Super crispy onion rings – VeGaN

Ingredients

  • 2 sweet white onions
  • 1 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • Flaxseed vegan egg – 1 tablespoon of grated flaxseeds poured over with 2 tablespoonsย of hot boiling water and left for 5 minutes
  • 1 cup of plant-based milk (I used unsweetened soy milk)
  • 1 cup of breadcrumbs
  • Vegetable oil for frying

Directions

  1. Peel the onions. Then slice them into 1cm slices and separate them into rings. (you can also soak the slices in a cold water for 10 minutes, that way the onions will have less onion taste).
  2. In a bowl, stir together the flour, baking powder, and salt. Dip the rings into the flour mixture so they all covered and set aside.
  3. Add the vegan egg and the milk to the leftover flour mixture and whisk well. You can either use a whisker or a fork. The batter should be very smooth, sticky but not thick. Place an aluminumย foil beside the bowl and place a wire rack on it. (this way the cleaning will be faster ๐Ÿ™‚ ).
  4. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. Repeat with all the rings.
  5. Once the batter stopped dripping you can coat the rings in breadcrumbs and start to fry them in a pan (or in a deep fryer). Fry them for 2-3 minutes from both sides or until they will turn golden brown.
  6. Enjoy ๐Ÿ™‚
