A super easy patatas bravas (VeGaN)

I ate patatas bravas a couple of years back during my business trip in Spain. Patatas bravas is a very traditional Spanish tapas made with baked potatoes and a sauce. Usually, I cook at home the vegetarian version with classic mayonnaise sauce and with one baked egg on top. But don’t worry, sometimes I make the VeGaN version too :). It tastes the same way as the original one. So in case you want to try out something new and super easy at home try patatas bravas. You will need only a couple of basic ingredients and 30 minutes of your time. Have fun cooking and enjoy, or in this case “¡buen provecho” 🙂

  • 300g of potatoes
  • Olive oil
  • Red paprika powder
  • 2 tablespoons of VeGaN mayonnaise
  • 1 tablespoon of apple vinegar
  • 1 tablespoon of ketchup
  • Salt
  • Optional: chopped parsley leaves for decoration

  1. Peel and dice the potatoes. Place into a pot and cook in salty water for 10 minutes. After that drain and set aside to cool down a bit. Thanks to this step the potatoes will get an extra crunchiness and this is what you are looking for in patatas bravas 🙂
  2. Heat up 2 tablespoons of olive oil and add the cooked potatoes. Roast from all the sides until golden brown. It should take a maximum of 15 minutes.
  3. In a bowl mix the VeGaN mayo, vinegar and the ketchup. You can also add a pinch of salt if needed.
  4. Place the patatas bravas on a plate, sprinkle with the red paprika powder and drizzle over with the sauce. Optionally you can add some chopped fresh parsley leaves on top. If you can have a glass of a good and cold white wine next to it 🙂
