<p>Hello friends, I am back <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> It has been a while since I posted the last recipe. This is mostly because I have been working on some super cool (but still secret stuff <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> ) and also because I took a few days off, you know holidays season <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>Nevertheless, I am slowly finishing my plans for the next 2 months. The blog will be full of new recipes (I will post one each Tuesday and Friday) and my Instagram page will be packed (daily) with cool photos and stories. <h2 class="wp-block-heading">Fish fingers sandwich with 2 minute tartare sauce</h2>



<p>And now let&#8217;s talk about today&#8217;s recipe. Many people think that as a food blogger and a foodie I eat only fancy food. Or that I cook complicated dishes which not everybody can make at home. The truth is somewhere in between. Most of the time I try to eat the best as I can. Meaning, I cook a lot of pasta dishes, eat wholewheat bread, good meats, cheeses, and fruits. But when I am too busy I just crave some &#8220;dirty&#8221; fast food or a dish which takes a maximum of 10 minutes of cooking.</p>



<p>Although as a foodie, I try to pump up those simple dishes too. Like the sandwich from today. Normally you would need 3-4 fish fingers, some toasted bread, a spoon of tartare sauce and optionally some ketchup. You would combine all of the ingredients together and that would be it.</p>

<p>But not for me, even though&nbsp;I have only 10 minutes I still make my own tartare sauce, rather than buying one in the grocery store. Also, I will add a few&nbsp;salad leaves to make the dish more colorful and give it some crunchiness.</p>



<p>To sum it up, as a foodie I simply believe that even a simple dish should be delicious. And as a food blogger/recipe creator, I believe that each one of you can make it at home without any problems <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>Majority of people eats the smocked mackerel just with a slice of bread. On the other hand, there are many other ways of how to eat it. One of them is to make a smooth paté from it. <p>Grilled gilt-head bream with potato salad.</p>



<p>In Poland the 1st and 3rd of May is a Holiday time &#8211; 1st of May is an International worker day and also a day when Poland entered the European Union and the 3rd of May is the Constitution day.</p>



<p>Besides that it is the official start of the grill season. I live in the country side and have to say that during these days the only thing you can smell outside is the smoke from the grills. <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> People usually grill sausages, meat slices, burgers, vegetables or cheeses. In the past few years, I always went for the burger or the sausages. </p>



<p>This time though, I have decided to go into another direction and I have chosen fish. <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> And it was a good decision. The preparation was super easy and the fish turned out tender and delicious. Additionally, I have served the fish with a tasty and refreshing potato salad and a baguette. </p>

Pour over with cold water, add 1 tablespoon of table salt and bring to boil. Lower the heat to medium, cover the pot with the lid and cook for 15-20 minutes (the final time depends on the size of your potatoes). Once ready, drain, place on a chopping board, quarter and leave to cool.</li><li id="wpzoom-rcb-direction-step-604230db3eae2" class="direction-step"><strong>THE GARLIC HERB BUTTER:</strong> In a small bowl mix the butter, chopped parsley, thyme, and the chopped garlic until well combined. Set aside.</li><li id="wpzoom-rcb-direction-step-604230db3eae3" class="direction-step"><strong>THE GILT-HEAD BREAM:</strong> Season the inside of the fish with a pinch of sea salt. Place in the lemon slices and top with 1 tablespoon of garlic herb butter and then add few thyme sprigs. Grill the fish on the preheated grill (approx. 190°C) for about 20 minutes per side. NOTE: I have used a special steel fish holder for the grill, thanks to it the fish is not falling apart during grilling).</li><li id="wpzoom-rcb-direction-step-604230db3eae4" class="direction-step"><strong>POTATO SALAD:</strong> Meanwhile the fish is grilling you can prepare the salad. Add the cooled potatoes, cubed apple, chopped shallot, and spring onions into a bigger bowl. Pour over with maple syrup and the olive oil, add both mustards and stir well.</li><li id="wpzoom-rcb-direction-step-1614950940573557" class="direction-step">Serve the fish with the potato salad and a French baguette or rye bread.</li></ul>

<p>Why should you buy and MSC certified fish and seafood?</p>



<p>Seas and oceans are &#8220;plastified&#8221; more than ever. 10 Million tons of plastic are thrown into them per year. The life in seas and oceans never had been in bigger danger and today there are more than 700 marine species waiting for their last hour to come.</p>



<p>Besides this huge issue, there is one more. (yet, not so popular to talk about) &#8211;&nbsp;<strong>overfishing.</strong></p>

<p>And what causes overfishing for example? Illegal fishing and destructive fishing (use of cyanide and explosives). In some countries, cyanide is used to stun fish making them easier to catch.&nbsp;Elsewhere, explosives like dynamite are used to kill fish so they float to the surface and can be easily scooped up by nets. I honestly think both of this things are horrible and I really hope I never ate fish which was caught&nbsp;like that <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f641.png" alt="🙁" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<ul><li>You must be cautious about what fish and seafood you buy. You should always check (ask your fishmonger) about the origin and the way how it was caught. Stay away from fish stores and markets which are not able to give you such an information. The fish and seafood should be from sustainable fisheries.&nbsp;</li><li>The second solution is very much connected to the first one. Always buy an&nbsp;<strong>MSC certified fish and seafood</strong>. The MSC blue fish label is a guarantee that the fish is from a reliable source.&nbsp;</li></ul>
