  • 4 medium 4 -sized sweet potatoes, peeled and diced

  • 1 cup 1 cottage cheese with chives

  • 1/2 cup 1/2 walnuts, roughly chopped

  • Seeds from 1 pomegranate

  • 2 tablespoons 2 olive oil

  • Salt and freshly ground black pepper, to taste

  • Optional: Fresh chives or parsley for garnish

Directions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, toss the diced sweet potatoes with olive oil, salt, and pepper.
  • Spread the sweet potatoes on the prepared baking sheet in a single layer.
  • Bake in the preheated oven for about 20-25 minutes or until the sweet potatoes are tender and slightly golden.
  • Once cooked, allow the sweet potatoes to cool to room temperature.
  • In a large salad bowl, combine the cooled sweet potatoes, cottage cheese with chives, chopped walnuts, and pomegranate seeds. Mix gently to combine.
