Ingredients

  • 3 large 3 sweet potatoes, peeled and cubed

  • 1 can 1 (400ml) coconut milk

  • 2 medium 2 -sized chili peppers, deseeded and finely chopped (adjust to heat preference)

  • 1 1 onion, finely chopped

  • 3 cloves 3 garlic, minced

  • 1 teaspoon 1 ground turmeric

  • 1 teaspoon 1 ground cumin

  • 1 tablespoon 1 olive or coconut oil

  • Salt and freshly ground black pepper, to taste

  • 4 cups 4 vegetable or chicken broth

  • Optional: Fresh cilantro or parsley for garnish

Directions

  • In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  • Add the minced garlic and chopped chili peppers, and sauté for another 2 minutes until fragrant.
  • Stir in the ground turmeric and cumin, cooking for an additional minute.
  • Add the cubed sweet potatoes to the pot and stir to coat with the spices.
  • Pour in the coconut milk and broth. Increase the heat and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover, and simmer for 25-30 minutes, or until the sweet potatoes are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro or parsley if desired.
