Can I add protein to this stew?

Absolutely! Chicken, tofu, or chickpeas make great additions. Add them during the simmering process.

How spicy is this stew?

The heat level can be adjusted by using more or fewer chili peppers. Removing the seeds also reduces the heat.

Can I use regular potatoes instead of sweet potatoes?

Yes, but sweet potatoes offer a unique flavor and pair especially well with coconut milk and spices.

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or microwave.

Can I use canned sweet potatoes?

Fresh sweet potatoes are recommended for the best texture and flavor, but if you’re short on time, drained canned sweet potatoes can work in a pinch.
