Hello friends, I hope you are doing well. I know that it is Monday and many of you (including myself) are having a lazy day 🙂 Therefore I have prepared a super easy and lazy recipe where you do not need to stand in the kitchen all the time 🙂 The preparation takes a maximum of 3-5 minutes (depending on how fast you can peel the potatoes 🙂 ) and the cooking itself takes around 45 minutes. So I will cut the talk here and give you the recipe straight away 🙂 Enjoy and have a great week 🙂

Ingredients

  • 5-6 medium-sized potatoes

  • 1 tablespoon of dried thyme

  • 2 tablespoons of sweet red paprika

  • 1/4 teaspoon of ground chili paprika

  • 1/2 teaspoon of whole cumin seeds

  • 150ml of white plant-based yogurt

  • 2 tablespoons of spring onions

  • Salt & pepper

  • 2 tablespoons of vegetable oil

Directions

  • Preheat your oven to 190°C.
  • Peel the potatoes and cut lengthways. In a bowl mix the dried thyme, sweet and chili paprika, cumin seeds, and vegetable oil. Add a pinch of salt and pepper and place in the potatoes. Toss well until the potatoes are fully covered with the seasonings.
  • Place the potatoes on the baking sheet and put them into the oven. Bake for 45 minutes or until golden, stirring once after 30 minutes.
  • Serve the potatoes with yogurt and chopped spring onions.
  • Enjoy 🙂
