Traditional Polish Cauliflower Fritters with a Parmesan Twist

Cauliflower fritters, traditionally known as “placki z kalafiora” in Polish, are a staple in many Polish households. They are crispy, and flavorful, and can be served as an appetizer, side dish, or even a main course. In this recipe, we’ve added a touch of Parmesan cheese, giving these fritters an extra burst of flavor.

The Parmesan not only enhances the taste but also adds a slightly crispy edge to the fritters.

Ingredients

  • 1 medium 1 -sized cauliflower (about 500 grams), broken into florets

  • 1/2 cup 1/2 grated Parmesan cheese

  • 2 large 2 eggs

  • 1/2 cup 1/2 all-purpose flour

  • 1/4 cup 1/4 milk (optional, for consistency)

  • 2 cloves 2 garlic, minced

  • 1/4 cup 1/4 fresh parsley, finely chopped

  • Salt and pepper, to taste

  • Vegetable oil, for frying

Directions

  • Preparation of Cauliflower
  • Steam the cauliflower florets until they are soft but not mushy. This should take about 5-7 minutes. Once done, drain the cauliflower and let it cool.
  • Mashing the Cauliflower
  • Once the cauliflower is cooled, place it in a large mixing bowl and mash it using a fork or a potato masher until it reaches a coarse consistency.
  • Adding Ingredients
  • To the mashed cauliflower, add the grated Parmesan cheese, eggs, flour, garlic, parsley, salt, and pepper. Mix well until all ingredients are combined. If the batter seems too thick, you can add a bit of milk to reach the desired consistency.
  • Frying the Fritters
  • In a large frying pan, heat the vegetable oil over medium heat. Once the oil is hot, drop spoonfuls of the cauliflower mixture into the pan. Flatten them slightly with the back of a spoon to form a patty shape.
  • Fry each side for about 3-4 minutes or until they are golden brown. Make sure not to overcrowd the pan.
  • Serving
  • Once fried, remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil. Serve warm, garnished with some extra parsley or your favorite dipping sauce.
