This week I have decided to “veganize” one of the most popular foods in the world – a Chicken Tikka Masala. I kept the original recipe just adapted it to a vegan version. More concretely I have changed the chicken for tofu and swop all the dairy products for plant-based ones. And the result? One of the most awesome food ever. And I am being pretty honest with you guys. This is probably the best Tofu Tikka Masala on the internet. Trust me, as a former omnivore, I know how this food should taste 🙂 And that’s why I am pretty confident that you will not find better recipe out there 🙂

Tento týždeň som sa rozhodol že zveganizujem jedno z najpopulárnejších jedál na svete – Kuracie Tikka Masala. Držal som sa originálneho receptu len som ho pozmenil na vegánsku verziu. Presnejšie povedané, namiesto kuracieho mäsa som použil tofu a vymenil mliečne výrobky na rastlinné. A výsledok? Jedno z najlepších jedál aké som kedy uvaril. A to vravím fakt úprimne. Toto je pravdepodobne najlepšia Tofu Tikka Masala na internete. A prečo by ste mi mali veriť? Pretože som toto jedlo jedol 100x ako všežravec a viem ako má chutiť 🙂

| Tofu Tikka Masala – klasika po vegánsky

Ingredients

  • 250g tofu (I used a 90% soy tofu) – 250g tvrdého tofu (najlepšie ak má okolo 90% sóje)

  • 150ml non-dairy plain yogurt or thick coconut cream – 150ml rastlinného bieleho jogurtu

  • 1 tablespoon of cumin seeds – 1 lyžica celého kmínku

  • 2 tablespoons of Kashmiri chili powder – 2 lyžice Kašmírskeho čili prášku

  • 2 tablespoons of turmeric – 2 lyžice mletej kurkumy

  • 4 whole green cardamoms – 4 celé zelené kardamóny

  • 6 cloves – 6 klinčekov

  • 2 bay leaves – 2 bobkové listy

  • 1 cinnamon stick – 1 celá škorica

  • 1 teaspoon of coriander powder – 1 čajová lyžička mletého koriandru

  • 2 teaspoons of Garam Masala – 2 čajové lyžičky korenia Garam Masala

  • Salt – soľ

  • 50ml of tomato paste – 50ml paradajového pretlaku (pasty)

  • 100ml of non-dairy milk (I used rice milk) – 100ml rastlinného mlieka (ja som použil ryžové)

  • 50g of cashew nuts – 50g kešu orieškov

  • 1 green chili – 1 zelená čili paprička

  • 1 green bell pepper – 1 zelená paprika

  • 4 medium-sized onions – 4 stredne veľké cibule

  • 4 tomatoes – 4 paradajky

  • bunch of fresh coriander – hrsť čerstvého koriandru

  • 100ml of non-dairy double cream – 100ml rastlinnej smotany

  • vegetable oil – rastlinný olej

  • 5 cm ginger piece – 5cm kus zázvoru

  • 8 garlic cloves – 8 strúčikov cesnaku

Directions

  • TOFU
  • Cut your tofu into bigger cubes and place into a bowl. Now add the plain yogurt, 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri Chilli Powder and 1/2 of a teaspoon of Garam Masala and mix well. Grate in the half of your ginger and 4 cloves of garlic and add to marinade. Cover with foil and place it into the fridge for at least 2 hours. (if you can leave it overnight even better).

    / Tofu pokroj na kocky a daj do misky. Pridaj biely jogurt, 1/2 lyžičky kurkumy, 1 lyžičku Kašmírskeho čili, 1/2 lyžičky Garam Masala a poriadne vymiešaj. Na jemno postrúhaj polovicu zázvoru a 4 strúčiky cesnaku. Pridaj do tofu a opäť pomiešaj. Misku prikry fóliou a daj do chladničky na minimálne 2 hodiny. Ak môžeš tak ju ponechaj v chladničke aj celú noc. 
  • Place the cashew nuts into a smaller bowl and pour in the milk. Put into the fridge and soak for the same time as you marinate the tofu.

    / Daj kešu do misky a zalej mliekom. Kešu ponechaj v mlieku presne tak dlho ako dlho budeš marinovať tofu. 
  • Once your tofu is marinated, preheat your oven to 200°C. Prepare your baking tray and put 1 tablespoon of vegetable oil in it. Spread the oil evenly by using a brush and then place in the tofu. Bake for 20-25 minutes until the tofu will turn golden-brown. Once ready set aside to cool down a bit.

    Keď tofu stálo už dosť dlho, predhrej si rúru na 200°C. Priprav si formu na pečenie, daj do nej 1 lyžicu oleja a rovnomerne ho rozotri. Do takto pripravenej formy daj tofu, vlož do rúry a peč od 20-25 minút, alebo do momentu kedy tofu naberie zlato hnedú farbu. Po upečení ponechaj v kľude aby tofu trošku vychladlo.
  • THE SAUCE – Omáčka
  • Now is time to prepare the sauce. In a bigger saucepan preheat 2 tablespoons of vegetable oil. Add the cumin seeds, green cardamoms, cloves, cinnamon, bay leaves and roast for 30 seconds. All the spices will release those beautiful flavors very quickly so do not burn them. Meanwhile, chop roughly 2 onions and the green chili and add to the spices. Roast for 15 minutes on medium heat until the onion will turn brown.

    / Teraz je čas pripraviť si omáčku. Vo väčšej panvici si ohrej 2 lyžice oleja a pridaj kmín, zelený kardamon, klinčeky, bobkové listy, škoricu a peč približne 30 sekúnd. Prípravy veľmi rýchlo začnú výpúšťať arómy tak dávaj pozor aby si ich nespálil/a. Medzičasom si na hrubo pokrájaj dve cibule a pridaj do panvice. Peč na miernom ohni približne 15 minút alebo pokiaľ cibuľka nebude zlato hnedá. 
  • TOFU TIKKA MASALA
  • Now take the baked tofu and stir into the sauce. Mix well and cook on a medium heat. Take out the soaked cashew nuts from the fridge, put into a food processor and blend to a smooth paste. Add to the sauce.

    Vezmi upečené tofu a celé ho pridaj do omáčky. Poriadne vymiešaj a var na miernom ohni. Kešu ktoré sa doteraz močilo v mlieku daj do kuchynského robota alebo mixéra a mixuj tak dlho až kým nepovstane jemná pasta. Takúto pastu pridaj do omáčky. 
  • Roughly chop 2 onions and the green bell pepper and add to the sauce as well. It will give it a nice crispy texture. If your sauce became very thick and you want to lose it a bit, you can slowly add the double cream. Sprinkle with the chopped coriander leaves and serve with rice or naan. Enjoy 🙂

    Na hrubo si pokroj 2 cibule, zelenú papriku a pridaj do omáčky. Tieto dve prísady jej dodajú super chrumkavosť. Ak je tvoja omáčka príliš hustá tak ju môžeš zjemniť tak že do nej pridáš rastlinnú smotanu. Hotovú omáčku posýp posekaným koriandrom a podávaj s ryžou alebo indickým chlebom. Dobrú chuť.
