This week I have decided to “veganize” one of the most popular foods in the world – a Chicken Tikka Masala. I kept the original recipe just adapted it to a vegan version. More concretely I have changed the chicken for tofu and swop all the dairy products for plant-based ones. And the result? One of the most awesome food ever. And I am being pretty honest with you guys. This is probably the best Tofu Tikka Masala on the internet. Trust me, as a former omnivore, I know how this food should taste πŸ™‚ And that’s why I am pretty confident that you will not find better recipe out there πŸ™‚

| Tofu Tikka Masala – klasika po vegΓ‘nsky

Ingredients

  • 250g tofu (I used a 90% soy tofu) – 250g tvrdΓ©ho tofu (najlepΕ‘ie ak mΓ‘ okolo 90% sΓ³je)

  • 150ml non-dairy plain yogurtΒ or thick coconut cream – 150ml rastlinnΓ©ho bieleho jogurtu

  • 1 tablespoon of cumin seeds – 1 lyΕΎica celΓ©ho kmΓ­nku

  • 2 tablespoons of Kashmiri chili powder – 2 lyΕΎice KaΕ‘mΓ­rskeho čili prΓ‘Ε‘ku

  • 2 tablespoons of turmeric – 2 lyΕΎice mletej kurkumy

  • 4 whole green cardamoms – 4 celΓ© zelenΓ© kardamΓ³ny

  • 6 cloves – 6 klinčekov

  • 2 bay leaves – 2 bobkovΓ© listy

  • 1 cinnamonΒ stick – 1 celΓ‘ Ε‘korica

  • 1 teaspoon of coriander powder – 1 čajovΓ‘ lyΕΎička mletΓ©ho koriandru

  • 2 teaspoons of Garam Masala – 2 čajovΓ© lyΕΎičky korenia Garam Masala

  • Salt – soΔΎ

  • 50ml of tomato paste – 50ml paradajovΓ©ho pretlaku (pasty)

  • 100ml of non-dairy milk (I used rice milk) – 100ml rastlinnΓ©ho mlieka (ja som pouΕΎil ryΕΎovΓ©)

  • 50g of cashew nuts – 50g keΕ‘u orieΕ‘kov

  • 1 green chili – 1 zelenΓ‘ čili paprička

  • 1 green bell pepper – 1 zelenΓ‘ paprika

  • 4 medium-sized onions – 4 stredne veΔΎkΓ© cibule

  • 4 tomatoes – 4 paradajky

  • bunch of fresh coriander – hrsΕ₯ čerstvΓ©ho koriandru

  • 100ml of non-dairy double cream – 100ml rastlinnej smotany

  • vegetable oil – rastlinnΓ½ olej

  • 5 cm ginger piece – 5cm kus zΓ‘zvoru

  • 8 garlic cloves – 8 strúčikov cesnaku

Directions

  • TOFU
  • Cut your tofu into bigger cubes and place into a bowl. Now add the plain yogurt, 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri Chilli Powder and 1/2 of a teaspoon of Garam Masala and mix well. Grate in the half of your ginger and 4 cloves of garlic and add to marinade. Cover with foil and place it into the fridge for at least 2 hours. (if you can leave it overnight even better).

    / Tofu pokroj na kockyΒ a daj do misky. Pridaj bielyΒ jogurt, 1/2 lyΕΎičky kurkumy, 1 lyΕΎičku KaΕ‘mΓ­rskeho čili, 1/2 lyΕΎičky Garam Masala a poriadne vymieΕ‘aj. Na jemno postrΓΊhaj polovicu zΓ‘zvoru a 4 strúčiky cesnaku. Pridaj do tofu a opΓ€Ε₯ pomieΕ‘aj. Misku prikry fΓ³liou a daj do chladničky na minimΓ‘lne 2 hodiny. Ak mΓ΄ΕΎeΕ‘ tak juΒ ponechaj v chladničke aj celΓΊ noc.Β 
  • Place the cashew nuts into a smaller bowl and pour in the milk. Put into the fridge and soak for the same time as you marinate the tofu.

    / Daj keΕ‘u do misky a zalej mliekom. KeΕ‘u ponechaj v mliekuΒ presne tak dlho akoΒ dlho budeΕ‘ marinovaΕ₯ tofu.Β 
  • Once your tofu is marinated, preheat your oven to 200Β°C. Prepare your baking tray and put 1 tablespoon of vegetable oil in it. Spread the oil evenly by using a brush and then place in the tofu. Bake for 20-25 minutes until the tofu will turn golden-brown. Once ready set aside to cool down a bit.

    Keď tofu stΓ‘lo uΕΎ dosΕ₯ dlho, predhrej si rΓΊru na 200Β°C. Priprav si formu na pečenie, daj do nej 1 lyΕΎicu oleja a rovnomerne ho rozotri. Do takto pripravenej formy daj tofu, vloΕΎ do rΓΊry a peč od 20-25 minΓΊt, alebo do momentu kedy tofu naberie zlato hnedΓΊ farbu. Po upečenΓ­ ponechaj v kΔΎude aby tofu troΕ‘ku vychladlo.
  • THE SAUCE – OmÑčka
  • Now is time to prepare the sauce. In a bigger saucepan preheat 2 tablespoons of vegetable oil. Add the cumin seeds, green cardamoms, cloves, cinnamon, bay leaves and roast for 30 seconds. All the spices will release those beautiful flavors very quickly so do not burn them. Meanwhile, chop roughly 2 onions and the green chili and add to the spices. Roast for 15 minutes on medium heat until the onion will turn brown.

    / Teraz je čas pripraviΕ₯ si omÑčku. Vo vÀčőej panvici si ohrejΒ 2 lyΕΎice oleja a pridajΒ kmΓ­n, zelenΓ½ kardamon, klinčeky, bobkovΓ© listy, Ε‘koricu a peč pribliΕΎne 30 sekΓΊnd. PrΓ­pravy veΔΎmi rΓ½chlo začnΓΊ vΓ½pΓΊΕ‘Ε₯aΕ₯ arΓ³my tak dΓ‘vaj pozor aby si ich nespΓ‘lil/a. Medzičasom si na hrubo pokrΓ‘jaj dve cibule a pridaj do panvice. Peč na miernomΒ ohniΒ pribliΕΎne 15 minΓΊt alebo pokiaΔΎ cibuΔΎka nebude zlato hnedΓ‘.Β 
  • TOFU TIKKA MASALA
  • Now take the baked tofu and stir into the sauce. Mix well and cook on a medium heat. Take out the soaked cashew nuts from the fridge, put into a food processor and blend to a smooth paste. Add to the sauce.

    Vezmi upečené tofu a celé ho pridaj do omÑčky. Poriadne vymieőaj a var na miernom ohni. Keőu ktoré sa doteraz močilo v mlieku daj do kuchynského robota alebo mixéra a mixuj tak dlho až kým nepovstane jemnÑ pasta. Takúto pastu pridaj do omÑčky. 
  • Roughly chop 2 onions and the green bell pepper and add to the sauce as well. It will give it a nice crispy texture. If your sauce became very thick and you want to lose it a bit, you can slowly add the double cream. Sprinkle with the chopped coriander leaves and serve with rice or naan. Enjoy πŸ™‚
