Tofu Tikka Masala – a classic veganized

This week I have decided to “veganize” one of the most popular foods in the world – a Chicken Tikka Masala. I kept the original recipe just adapted it to a vegan version. More concretely I have changed the chicken for tofu and swop all the dairy products for plant-based ones. And the result? One of the most awesome food ever. And I am being pretty honest with you guys. This is probably the best Tofu Tikka Masala on the internet. Trust me, as a former omnivore, I know how this food should taste ๐Ÿ™‚ And that’s why I am pretty confident that you will not find better recipe out there ๐Ÿ™‚

| Tofu Tikka Masala – klasika po vegรกnsky

Ingredients

  • 250g tofu (I used a 90% soy tofu) – 250g tvrdรฉho tofu (najlepลกie ak mรก okolo 90% sรณje)

  • 150ml non-dairy plain yogurtย or thick coconut cream – 150ml rastlinnรฉho bieleho jogurtu

  • 1 tablespoon of cumin seeds – 1 lyลพica celรฉho kmรญnku

  • 2 tablespoons of Kashmiri chili powder – 2 lyลพice Kaลกmรญrskeho ฤili prรกลกku

  • 2 tablespoons of turmeric – 2 lyลพice mletej kurkumy

  • 4 whole green cardamoms – 4 celรฉ zelenรฉ kardamรณny

  • 6 cloves – 6 klinฤekov

  • 2 bay leaves – 2 bobkovรฉ listy

  • 1 cinnamonย stick – 1 celรก ลกkorica

  • 1 teaspoon of coriander powder – 1 ฤajovรก lyลพiฤka mletรฉho koriandru

  • 2 teaspoons of Garam Masala – 2 ฤajovรฉ lyลพiฤky korenia Garam Masala

  • Salt – soฤพ

  • 50ml of tomato paste – 50ml paradajovรฉho pretlaku (pasty)

  • 100ml of non-dairy milk (I used rice milk) – 100ml rastlinnรฉho mlieka (ja som pouลพil ryลพovรฉ)

  • 50g of cashew nuts – 50g keลกu orieลกkov

  • 1 green chili – 1 zelenรก ฤili papriฤka

  • 1 green bell pepper – 1 zelenรก paprika

  • 4 medium-sized onions – 4 stredne veฤพkรฉ cibule

  • 4 tomatoes – 4 paradajky

  • bunch of fresh coriander – hrsลฅ ฤerstvรฉho koriandru

  • 100ml of non-dairy double cream – 100ml rastlinnej smotany

  • vegetable oil – rastlinnรฝ olej

  • 5 cm ginger piece – 5cm kus zรกzvoru

  • 8 garlic cloves – 8 strรบฤikov cesnaku

Directions

  • TOFU
  • Cut your tofu into bigger cubes and place into a bowl. Now add the plain yogurt, 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri Chilli Powder and 1/2 of a teaspoon of Garam Masala and mix well. Grate in the half of your ginger and 4 cloves of garlic and add to marinade. Cover with foil and place it into the fridge for at least 2 hours. (if you can leave it overnight even better).

Na jemno postrรบhaj polovicu zรกzvoru a 4 strรบฤiky cesnaku. Pridaj do tofu a opรคลฅ pomieลกaj. Misku prikry fรณliou a daj do chladniฤky na minimรกlne 2 hodiny. Ak mรดลพeลก tak juย ponechaj v chladniฤke aj celรบ noc.ย 
  • Place the cashew nuts into a smaller bowl and pour in the milk. Put into the fridge and soak for the same time as you marinate the tofu.

    / Daj keลกu do misky a zalej mliekom. Keลกu ponechaj v mliekuย presne tak dlho akoย dlho budeลก marinovaลฅ tofu.ย 
  • Once your tofu is marinated, preheat your oven to 200ยฐC. Prepare your baking tray and put 1 tablespoon of vegetable oil in it. Spread the oil evenly by using a brush and then place in the tofu. Bake for 20-25 minutes until the tofu will turn golden-brown. Once ready set aside to cool down a bit.

    Keฤ tofu stรกlo uลพ dosลฅ dlho, predhrej si rรบru na 200ยฐC. Priprav si formu na peฤenie, daj do nej 1 lyลพicu oleja a rovnomerne ho rozotri. Do takto pripravenej formy daj tofu, vloลพ do rรบry a peฤ od 20-25 minรบt, alebo do momentu kedy tofu naberie zlato hnedรบ farbu. Po upeฤenรญ ponechaj v kฤพude aby tofu troลกku vychladlo.
  • THE SAUCE – Omรกฤka
  • Now is time to prepare the sauce. In a bigger saucepan preheat 2 tablespoons of vegetable oil. Add the cumin seeds, green cardamoms, cloves, cinnamon, bay leaves and roast for 30 seconds. All the spices will release those beautiful flavors very quickly so do not burn them. Meanwhile, chop roughly 2 onions and the green chili and add to the spices. Roast for 15 minutes on medium heat until the onion will turn brown.

Prรญpravy veฤพmi rรฝchlo zaฤnรบ vรฝpรบลกลฅaลฅ arรณmy tak dรกvaj pozor aby si ich nespรกlil/a. Medziฤasom si na hrubo pokrรกjaj dve cibule a pridaj do panvice. Peฤ na miernomย ohniย pribliลพne 15 minรบt alebo pokiaฤพ cibuฤพka nebude zlato hnedรก.ย 
  • TOFU TIKKA MASALA
  • Now take the baked tofu and stir into the sauce. Mix well and cook on a medium heat. Take out the soaked cashew nuts from the fridge, put into a food processor and blend to a smooth paste. Add to the sauce.

  • Roughly chop 2 onions and the green bell pepper and add to the sauce as well. It will give it a nice crispy texture. If your sauce became very thick and you want to lose it a bit, you can slowly add the double cream. Sprinkle with the chopped coriander leaves and serve with rice or naan. Enjoy ๐Ÿ™‚
