Quick and easy vegan pasta salad with basil pesto to satisfy your carbs cravings while still keeping your body fit.
There is nothing better than a delicious and fast dish. Especially when you are too busy and do not have a lot of time to spend in the kitchen. Also, you have just a couple of ingredients at home.
The following recipe is one of my favorites for such days. The whole process, preparation + the cooking, takes around 15 minutes and it serves 2 portions. So in case you want to cook something quick and yummy, this will be a perfect dish for you. Enjoy ๐

Ingredients
200g of pasta (spiral shape is the best)
50g of cocktailย tomatoes
Bunch of fresh basil leaves
2 tablespoons of pine nuts
2 tablespoons of fast VeGaN parmesan (you can find the recipe here)
Olive oil
1 clove of garlic
1 lemon
Salt & pepper
Directions
- Cook the pasta according to the instruction on the package. Drain and place back into the pot.
- Place the fresh basil leaves, 1 tablespoon of pine nuts, 1 clove of garlic, and 1 tablespoon of olive oil into a blender or food processor. Blend on high speed until the basil is completely mixed. Add 2 tablespoons of VeGaN parmesan and another tablespoon of olive oil and blend for another 1 minute. Squeeze in 2 tablespoons of lemon juice, season with a pinch of salt, and blend again. In case your pesto is very thick you can lose it by adding another tablespoon of olive oil.
- Once your pasta is ready add the pesto, and halved cocktail tomatoes to the pot and mix well with a spoon.
- Heat up a small pan and dry roast the pine nuts. Do not add any additional oil.
- Serve the pasta with vegan parmesan and roasted pine nuts on top.
