What to do when you have a few overripe bananas at home? Should you use them in a shake? Or make some banana muffins from them?

I have an even better solution. What you can make from them is a very easy vegan banana bread. And if you have some walnuts at home, even better.

And why is this vegan banana bread so cool?

First of all, it is VEGAN. And that means, there are only plant-based ingredients used. The second reason why you should bake it is the taste.

The melted chocolate bits inside are super yummy. The walnuts give this bread a wonderful crunchiness. And the caramelized banana on top makes it very complex in flavors and textures.

Honestly, I can’t recommend it enough.

What else you can add to the batter?

  1. You can always swap the spelt flour for a gluten-free version or use a nut-based flour. Like almond flour for example.
  2. You can add other types of nuts like chopped almonds or pecans.
  3. If you are not a fan of dark chocolate you can always use milk chocolate instead. But make sure it is vegan.
  4. If you would like to make the cake more insulin friendly (lower the Glycemic Index), you can use coconut sugar, xylitol or other sweeteners.

VeGaN banana bread with walnuts.

Ingredients

  • 5 ripe bananas

  • 1.5 cup of flour (I used spelt flour, but you can use any of your favourite)

  • 2 tbsp of baking powder

  • 50g of dark chocolate

  • 4 tbsp of brown sugar

  • 1 tbsp of lemon juice

  • 2 tbsp of vegetable oil

  • 2 tbsp of maple syrup

  • handful of walnuts

Directions

  • Mash 4 bananas with a fork, in a large bowl. Make sure to leave 1 banana aside. This will go on top of your bread for decoration.
  • Add your wet ingredients into the bowl with mashed bananas.
  • In the second bowl mix flour and baking powder. Cut dark chocolate into small pieces and add to the mix.
  • Mix dry and wet ingredients together, just combining the two. Do not overmix it.
  • Line your baking sheet (I used 5′ x 8′) with baking paper. Pour the mix into the form. Cut leftover banana on half lengthwise. Put it on top of the batter. Sprinkle the batter with a bit of brown sugar. Add few whole walnuts on top.
  • Bake on 200°C for 45min, until the cake is brown from the top.

Notes

  • You can add few chopped walnuts, or other nuts directly to the batter, for extra crunch.
