Hello friends, I am back 🙂 It has been a while since I posted the last recipe. This is mostly because I have been working on some super cool (but still secret stuff 🙂 ) and also because I took a few days off, you know holidays season 🙂

Nevertheless, I am slowly finishing my plans for the next 2 months. The blog will be full of new recipes (I will post one each Tuesday and Friday) and my Instagram page will be packed (daily) with cool photos and stories. So you can look forward to seeing some cool content 🙂

And now let’s talk about today’s recipe. Many people think that as a food blogger and a foodie I eat only fancy food. Or that I cook complicated dishes which not everybody can make at home. The truth is somewhere in between. Most of the time I try to eat the best as I can. Meaning, I cook a lot of pasta dishes, eat wholewheat bread, good meats, cheeses, and fruits. But when I am too busy I just crave some “dirty” fast food or a dish which takes a maximum of 10 minutes of cooking.

Although as a foodie, I try to pump up those simple dishes too. Like the sandwich from today. Normally you would need 3-4 fish fingers, some toasted bread, a spoon of tartare sauce and optionally some ketchup. You would combine all of the ingredients together and that would be it.

But not for me, even though I have only 10 minutes I still make my own tartare sauce, rather than buying one in the grocery store. Also, I will add a few salad leaves to make the dish more colorful and give it some crunchiness.

To sum it up, as a foodie I simply believe that even a simple dish should be delicious. And as a food blogger/recipe creator, I believe that each one of you can make it at home without any problems 🙂

Fish fingers sandwich with 2 minute tartare sauce- fast and delicious recipe

Ingredients

  • 6 fish fingers (try to buy the ones with the highest fish content)

  • 2 medium-sized pickled cucumbers

  • 1 small onion

  • 2 tablespoons of mayonnaise (*see the note below)

  • 1 tablespoon of soured cream

  • juice from 1/2 of a lemon

  • 2-4 leaves of green salad

  • salt and pepper

Directions

  • Bake the fish fingers according to the instructions on the package. You can either deep fry them in the hot oil and bake in the oven. Once ready, place on a paper kitchen towel and set aside.
  • Meanwhile chop finely the pickled cucumbers and the onion. Place the mayonnaise and the soured cream into the bowl and add the chopped onion and the pickled cucumbers, squeeze in the lemon juice and season with a pinch of salt and black pepper. Mix well until all the ingredients are well combined.
  • Toast the bread in the toaster or on a hot pan without oil.
  • Spread the tartare sauce on a slice of bread, add the salad leaves and place the fish fingers on top.
  • Optionally you can serve the sandwiches with some fries.
  • Enjoy 🙂

Notes

  • In case you want to make your own mayonnaise instead of using the one from the store, here is the recipe. Beat 3 whole eggs into a taller container. Add 1 tablespoon of mustard, a pinch of salt and 1 tablespoon of olive oil. Place in an immersion blender and mix all the ingredients on a high speed for 1-2 minutes. Then gradually add approximately another 100ml of oil and mix on high speed until you get a thick sauce.
