How to bake bread? Easy recipe for everyone

by Jan Vasil

Today I will show you that everybody can make bread at home. The one you, your friends and family will want to eat again and again 🙂 The crunchy crust, the yummy and thick inside, and the smell… Hmmm… It all makes me hungry when I just think about it 🙂 And I can guarantee, that once you will taste it you will not want to buy bread in the store. Trust me 🙂

Dnes ti ukážem, že každý si môže doma upiecť svoj vlastný super chlieb. Taký ktorý si obľúbiš ty, tvoji známi a určite aj tvoja rodina. Každý ho bude chcieť jesť dookola 🙂 Dokonalá chrumkavá kôrka, voňavé a mäkké vnútro, a tá vôňa. Mňam… Som hladný iba keď na to myslím. A tak isto ti zaručujem, že už nikdy nebudeš chcieť chlieb z obchodu. Ver mi 🙂

Ingredients

  • 300g of wheat bread flour, type 750 – 300g pšeničnej chlebovej múky, typ 750.

  • 300g of rye bread flour, type 2000 – 300g ražnej chlebovej múky, typ 2000.

  • 1 tea spoon of salt (if possible use sea salt) – 1 lyžička soli (najlepšie morskej)

  • 1/2 cup of sunflower seeds (you can also use 1/2 cup of pumpkin seeds) – 1/2 hrnčeka slnečnicových semiačok (môžeš použiť aj tekvicové ak chceš)

  • 240g of rye sourdough – 240g ražného kvásku

  • 350g of water – 350g vody

Directions

  • Place a bigger bowl on your scale and put in all the dry ingredients: flours, salt, and seeds. Mix well. Tare your scale to zero and add the sourdough. Tare the scale again to zero and add the water. —– Na váhu si polož väčšiu misku a pomaly vlož všetky suché prísady: múky, soľ, semiačka. Poriadne premiešaj. Vynuluj si váhu a pridaj kvások. Opäť si vynuluj váhu a pridaj vodu.
  • Mix in your kitchen mixer until you will get an elastic material. (You can also mix it with a spoon for a bit and then finish it by using your hands) The dough should not stick to your fingers. If it does you can add a bit more flour. —– Takto pripravené cesto poriadne vymiešaj za pomoci kuchynského robota (ak ho nemáš tak použi lyžicu a neskôr cesto vymiešaj rukami).  Cesto by sa ti nemalo lepiť k prstom. Ak sa predsa len lepí kľudne dodaj trochu viac múky.
  • Once the dough is well mixed, place it on the baking tray, and dust the top with 3 tablespoons of flour. (I use a silicone form which I like to smear with an olive oil). —– Keď máš cesto už vymiešané tak ho prelož do chlebovej formy na pečenie, a vrch posýp 3 lyžicami múky. (ja používam silikónovú formu ktorú jemne vytriem olivovým olejom)
  • Take a sharp knife and cut some strips on top of the bread. A nice ornament will make the bread look amazing 🙂 —– Ostrým nožom jemne nakroj vrch chleba tak aby ti vznikol ornament. Chlieb vďaka nemu vyzerá dokonale 🙂
  • Cover with a kitchen towel and leave to ferment for 3-4 hours. During this time your bread should grow up nicely and almost double in size. If you have a cold kitchen you can also place it into your oven which you preheated before to maximum 30-40 °C. —– Takto nakrojený chlieb zakry kuchynskou utierkov a ponechaj kysnúť po dobu 3-4 hodín. Počas tejto doby by mal tvoj chlieb skoro zdvojnásobiť svoju veľkosť. Ak máš v kuchyni chladnejšie tak ho môžeš vložiť do rúry predhriatej na nie viac ako  30-40 °C.
  • Place your bread into a cold oven, set up the temperature to 175 °C and bake for 70 minutes. Enjoy 🙂 —– Ak je chlieb už pripravený na pečenie tak ho vlož do chladnej rúry, nastav teplotu na 175 °C a peč 70 minút.

Notes

  • To make your bread as good as possible I definitely recommend using a home made sourdough. You can buy it online, get it from your friends or make it at home. I use my own one which is 6 months old. So far 🙂 / Ak chceš aby tvoj chlieb chutnal skutočne dobre tak ti odporúčam použiť domáci kvások. Dá sa kúpiť online, môžu ti ho dať známy alebo si ho môžeš urobiť doma sám. Ja používam svoj vlastný ktorý ma niečo vyše 6 mesiacov. Zaťial 🙂
