Ingredients

  • 5 5 fresh cucumbers, grated

  • 3 3 pickles, finely chopped

  • 1 large 1 onion, diced

  • 2 cloves 2 garlic, minced

  • 4 cups 4 vegetable broth

  • 1 cup 1 sour cream

  • 2 tablespoons 2 fresh dill, chopped

  • 2 tablespoons 2 olive oil

  • 1 tablespoon 1 white vinegar

  • Salt and pepper to taste

  • Optional: Fresh dill and sour cream for garnish

Directions

  • Prepare the Base:
  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic, and sauté for about 3-5 minutes until they become translucent.
  • Add the Cucumbers and Broth:
  • Stir in the grated cucumbers, pickles, and vegetable broth.
  • Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes.
  • Add the Remaining Ingredients:
  • Stir in the sour cream, dill, white vinegar, salt, and pepper.
  • Cook for an additional 5 minutes on low heat, stirring occasionally to ensure all ingredients are well combined.
  • Serve:
  • Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill if desired.
