This cake ”Kremówka” definitely reminds me of my childhood. I clearly remember those couple of Sundays in a year when we used to make them at home. I could smell the puff pastry and the vanilla pudding in the whole house. On the other hand, there was something very annoying about this cake.

Those couple of hours which I had to wait until the cream thickens in the fridge. They seemed unbelievably long (you probably know what I am talking about here 🙂 ). But once the cake was ready to be served there was nothing better in the whole world. It was just me and my “kremówka”. 🙂

The history of “kremówka” (Papal cream cake).

This cake is usually made from puff pastry, vanilla pudding, and whipped cream. Although in Poland you can find some versions which contain some alcohol as well. (nope, it is not vodka 🙂 ) Usually it is Amaretto, a sweet liqueur made from almonds.

This cake got very popular in Poland after John Paul II. (the first Catholic pope from Eastern Europe) openly said that “Kremówka” was his most favorite cake and he used to eat them a lot when he was younger. Since then they are also called a “Papal Cake”. So when you visit Wawel Castle in Krakow, you should definitely check out the coffee place on the inner square. You will not regret 🙂

Vegánsky krémeš.

Tento zákusok mi pripomína moje detstvo. Presne si pamätám tých pár nedieľ v roku keď sme ich robili doma. Vôňu lístkového cesta a vanilkového pudingu bolo cítiť v celom dome. Na druhej strane som vôbec nemal rád tých pár hodín čakania až kým krém zhustne v chaldničke.

Tých pár hodín mi pripadalo ako celá večnosť. (ale veď ty určite vieš čo mám na mysli). Ale keď už bolo všetko ok a krémeš bol hotový do jedenia, neexistovalo pre mňa na svete nič iné. Bol som tam iba ja a moj krémeš 🙂

 História krémeša.

Podľa mňa všetci dobre viete z čoho je krémeš pripraveý. A ak predsa len nie tak sú to tieto 3 veci: lístkové cesto, vanilkový puding a šľahačka alebo vyšľahaná smotana. Čo však možno neviete je, že v Poľsku sa miestami do krémeša pridáva aj alkohol. (ale nie, nie je to vodka :). Zvyčajne ide o Amaretto, čo je sladký mandľový likér.

Krémeš sa stal v Poľsku veľmi populárny po jednom z príhovorov Jána Pavla II. (prvého pápeža z východnej Európy) keď povedal, že krémeš bol jeho najobľúbenejším zákuskom z jeho mladých časov. Od tej doby sa krémeš v Poľsku nazýva aj “pápežský zákusok”. A ak niekedy v budúcnosti navštívite zámok Wawel v Krakove, tak si určite jeden dajte. Kaviareň ktorá ich má najlepšie sa nachádza na zámočnom námestí. Určite neoľutujete 🙂

A v prípade že ste vegánom tak vám neostáva nič iné len si spraviť krémeše doma. Určite vám v tom pomôže nasledujúci recept.  A budťe v pohode, mne tiež už neostáva nič iné, len si spraviť krémeše doma 🙂

Ingredients

  • 1 1/2 cup of non-dairy milk – 1 1/2 hrnčeka rastlinného mlieka

  • 1/2 of cup and 2 tbsp of flour – 1/2 hrnčeka a 2 lyžice múky

  • 1/3 of cup brown sugar – 1/3 hrnčka hnedého cukru

  • 2 tbsp of vanilla sugar – 2 lyžice vanilkého cukru

  • 2 tbsp of linseed oil – 2 lyžice ľanového oleja

  • a bit of powdered sugar for dusting – trochu práškového cukru na posypanie

  • 1 pack of puff pastry – 1 balenie lístkového cesta

Directions

  • Unpack the puff pastry, roll out to a baking sheet and cut into two pieces. Make small holes by using a fork. Bake in preheated oven at 220 °C for about 15-20 minutes. Once it is baked set aside to cool down. – Otvor lístkové cesto a rozlož na plechu na pečenie. Rozkroj ho na dve polivice a s vidličkou poriadne podierkuj. Peč vo vyhriatej rúre na 220 °C 15-20 minút. Po upečení ho nechaj vychladnúť. 
  • In a smaller pot heat up 1/2 of the milk with sugar. Into the second half of the milk gradually stir in the flour by using a sifter. – V menšom hrnci ohrej polovicu mlieka a pridaj do neho hnedý cukor. Medzičasom pomaly vmiešaj múku do druhej polovice mlieka. Aby sa nevytvorili hrúdky tak odporúčam použiť sitko. 
  • Mix the milk with flour into hot milk with sugar and stir until you will get a thick pudding. Then add the linseed oil and mix well, leave to cool down. – Do mlieka s cukrom pridaj mlieko vymiešané s múkou. Miešaj dovtedy až kým sa ti nevytvorí hustý puding. Potom pridaj ľanový olej, poriadne vymiešaj a nechaj vychladnúť. 
  • Once your puff pastry is cooled you can spread the pudding on top and then cover with the second part of the puff pastry. Dust the top with the powdered sugar and place into the fridge to completely cool down. – Keď je už lístkové cesto studené možeš na neho naniesť krém a zakryť druhou polovicou lístkového cesta. Posyp práškovým cukrom a daj na pár hodín do chladničky.
